Teaching an Ol' Burger New Tricks
I was so thrilled with the success of my last burger that I decided to experiment with some different types of meats and fixings this time around. Given my husband's obsession with Italian sausage lately, I decided to add that to the mix. The kids really enjoyed the meal and my daughter viewed it as a "giant meatball"!

In Honor of St. Patty's, Pork and Cabbage Two Different Ways!
This St. Patrick's Day, I really wanted to celebrate the night with some corned beef and cabbage. However, I thought it would also be a great opportunity to try out an italian sausage and cabbage recipe from Everyday Paleo. So after a trip down to WholeFoods to get some local cabbage and red onions, I went home to defrost some sausages from Costco. As usual, I didn't follow this recipe to the t. And I realized I was hungry while waiting for the sausages to defrost!

Spinach, Sweet Potato and Turkey.... in a Burger
Yes, I have been away for a while since things have gotten a little hectic in my life. Twas expected and I appreciate you, my faithful reader, for sticking with me as I continue on my journey. Now in my absence, I have had a couple of "cheat" days. On cheat day number one, I pigged out on meat jun, which by the way, happens to be one of my most favoritest Korean dishes.

How to Make Soup....
Hubby cooked tonight, so I thought I'd share my fiesta chicken soup I made the other day.
Having never made soup, I wondered just how hard it could be. Now authentic soup starts off with home made chicken stock/broth - not that stuff in a can. So being that our family devours at least 1 rotisserie chicken from Costco each week, I thought I'd see what happens if I boil the "left overs".

Keeping it Simple
Cooking a good dinner can be tough after a long day at work for anyone, let alone for a mom of three. I usually resort to something quick like leftovers. But what do you do if you at the last of it yesterday and it's 5:30? Sometimes I like to have breakfast for dinner: omelets, bacon and/or sausages. In the past I've been tempted to warm up chicken nuggets, have a bowl of cereal, eat some chips and chicken or make a quick peanut butter or grilled cheese sandwich.
However, tonight, I knew I had to at least try to get a healthful meal together.
